Roasted Root Melody
Right now I'm doing the Ultimate Reset and I've discovered some amazing recipes through this. VERY CLEAN & VERY GOOD!!! I am really loving this plan the expansion of recipes i'm learning and loving. So, I want to share with you this recipe because it truly is amazing and would be a great side with grilled meat.
1/4 medium-sized yam or sweet potato, washed and cut in to 1- inch chunks
1/2 carrot, washed and cut into 1-inch chunks
1/4 yellow onion, peeled and cut into wedges
2 tsp extra virgin olive oil
Himalayan Salt - to taste. (or sea salt)
To spice it up a bit add some cajun seasoning. (NO SALT ADDED - Use Mrs Dash)
Preheat Oven to 400F. In a bowl, toss all ingredients together. Spread on cookie sheet and bake for 40-50 minutes.
If you double or increase the recipe, make sure the vegetables don't crowd each other on the cookie sheet, because this will create steam and the vegetables will not crisp. When in doubt use 2 cookie sheets.
